Celebrating National Soup Month My Favorite Soup Recipes a Linky Party!

I was thrilled to learn this week that January is National Soup Month! I live in Texas, where Summer seems to last forever. When the weather finally turns cooler, theres nothing I love more than making soup. When the weather turns chilly and damp…by Texas standards, anyway...its the perfect dish to warm you up! There’s a lot to love about soup, really. It’s a comforting complete meal in a bowl, it’s usually pretty economical to make, and it can be light in calories and fat if you’re careful with your ingredients. I thought I’d share some of my favorite soup recipes with you in honor of National Soup Month today. I also want y’all to jump in on the fun and share your favorite soup recipes via the Linky party at the bottom of this post. I’m always on the lookout for great soup recipes to try, so I thought this would be a fun way to take part in National Soup Month.

(1) New England Clam Chowder. Until a few years ago, I didnt know I liked clam chowder. Then, I visited Boudin Bakery in San Francisco and my culinary life was changed by clam chowder in a sourdough bread bowl! I wanted to learn how to make it at home, and Secret Recipe Club gave me the perfect opportunity last Winter. This clam chowder is hearty and filling...and flavored with smoky bacon. 
(2) Sausage-White Bean Minestrone. Tyler Florence is one of my favorite chefs, and his minestrone is rich and flavorful. All you need to make this hearty soup a meal is a loaf of crusty bread to dunk in the flavorful broth. This is the perfect soup to enjoy on a lazy Sunday!
(3) King Ranch Chicken Soup. I just created this original recipe during the holidays, but its so good that I had to share it again. This soup has all the flavors found in King Ranch Casserole in a soup form. Its creamy, cheesy, and full of chicken pieces. Top with crispy tortilla strips and a colorful confetti of green onion, roma tomato, and avocado...its a fiesta for your mouth!
(4) Spicy Shrimp & Corn Bisque. This soup is creamy and spicy, with a touch of sweetness from corn and shrimp. I absolutely love this soup. Its good on its own, but a scoop of steamed rice works very nicely with it too!

Italian Chicken Orzo Soup Featuring a Gourmet Garden Refrigerated Herb Giveaway

After weeks of holiday-related indulgence, we’re really enjoying Lighten Up Month’s lighter, fresher menus. We’ve even decided to incorporate 1 or 2 meat-free days per week for our 2014 health-related change…we don’t use the word resolution in our house! We’re starting with Meatless Mondays in January and adding one more day in February. We couldn’t be vegetarian 100% of the time, but this seems like a great change to us. I’ll keep you posted on how it goes during the year and maybe even share some of our favorite veg-friendly recipes!

One of our favorite Lighten Up meals in Winter is soup…they’re a hearty, warming meal-in-a-bowl. One thing I refuse to compromise on is flavor, which can sometimes happen when you reduce fat and calories in your dishes. I find that using lots of herbs and spices really helps fill the void left by using lower-fat products. One easy way to use more herbs in your cooking is with Gourmet Garden tubed herbs and garlic. They recently sent me a package containing 11 of their most popular varieties, including garlic, parsley, chili peppers, Italian herbs and basil. As soon as I saw this grouping, an Italian-inspired soup immediately came to mind. If you’ve never used Gourmet Garden products, you simply must…I am now hooked on them and plan to keep them in my fridge at all times! They use organic herbs...within 24 hours of being picked, they chop them just like you would yourself. Then, theyre packaged in handy squeeze tubes that allow you to use just what you need. They even stay fresh in the fridge for up to 3 months!

Gourmet Garden herbs and garlic worked perfectly in my Italian Chicken-Orzo Soup. It’s chock full of fiber-rich veggies: onion, celery, zucchini, mushrooms and tomatoes…for protein, I used lean chicken breast. The convenient Gourmet Garden herbs saved me so much chopping time, and they provided the Italian flavor that I wanted for this soup. You can use any pasta you like, but I opted for tri-color orzo. It cooks quickly and is an easy-to-spoon pasta. This was a hearty, healthy dinner that we enjoyed on a cold Texas night. It makes 4-6 servings and tastes even better after an overnight rest in the fridge.

 Italian Chicken-Orzo Soup
a Weekend Gourmet Original
Ingredients:
  • 1 tbs. olive oil
  • 1 cup chopped yellow onion
  • 2 stalks celery, sliced
  • 1 cup chopped zucchini
  • 1 cup sliced mushrooms
  • 1 tbs. Gourmet Garden Chunky Garlic
  • 1 tbs. Gourmet Garden Parsley
  • 1 tbs. Gourmet Garden Italian Herbs
  • 1 tsp. Gourmet Garden Chili Peppers
  • 1 tbs. tomato paste
  • 1 can petite diced tomatoes
  • 6 cups chicken stock
  • 1 lb. chicken breast, cut in bite-sized pieces
  • Salt & pepper to taste
  • 1 cup tri-color orzo
Directions:
Step 1: Heat the olive oil in a large Dutch oven over med-high heat. Add the onion and celery and cook until the onion is translucent. Toss the chopped chicken with a bit of salt & pepper, then add to the pan. Cook until the chicken is no longer pink. Add the Gourmet Garden Ingredients and stir well to combine.
Step 2: Add the diced tomatoes – juice and all – to the pot. Add the zucchini and mushrooms, then stir to combine. Bring to a boil, then lower the heat to med-low. Cover and simmer for 30-45 minutes.
Step 3: After the initial simmer, add the orzo. Cover and cook for 10-15 minutes longer, until the orzo is tender. To serve, ladle into deep serving bowls. If desired, top each serving with a spoon of grated parmesan. This soup is hearty and filling on its own, but a simple green salad would pair nicely with it.
This soup is very comforting and filling…a healthy complete meal in a bowl! We loved the rich broth, the juicy chunks of chicken breast and the healthy veggies. The Gourmet Garden products provided the perfect Italian seasoning to the soup, and they were a snap to use. Budget Friendly SundaySupper Featuring Comforting White Bean Pancetta Soup

This week, #SundaySupper is focusing on budget-friendly recipes that taste great and are easy on your wallet. With the holiday season fast approaching, its good to have a collection of recipes that are inexpensive to make. It seems there are millions of extra expenses between Halloween and New Years Eve! Our hosts for this weeks event are T.R. of Gluten Free Crumbley and David from Cooking Chat. My recipe for Comforting White Bean-Pancetta Soup is a perfect Fall budget-stretching meal. It only costs about $12 for the ingredients to make a pot of soup that serves 4-6 hungry people! I always have a can or two of beans in my pantry, because theyre a versatile, inexpensive source of protein and fiber. 

This hearty Italian soup is perfect for chilly Fall evenings. It contains white beans, aromatic vegetables, tomatoes, a pinch of red pepper for a little bit of spice, and lots of flavorful Italian herbs. Just before serving, each bowl is topped with cooked diced pancetta and a sprinkle of freshly grated parmesan cheese. All you need to complete the meal is a green salad and some garlic bread. This soup is made with simple ingredients and is ready in less than an hour, making it perfect for busy weeknights.

Comforting White Bean-Pancetta Soup
adapted from Fine Cooking 

Ingredients:
  • 1 tbs. extra-virgin olive oil
  • 3 ounces small-diced pancetta 
  • 1/2 white onion, diced 
  • 1 medium carrot, diced 
  • 1 celery stalk, diced
  • Salt & pepper to taste
  • 2  garlic cloves, finely minced or grated
  • 1/2 tsp. red pepper flakes
  • 1 tbs. finely chopped basil
  • 1 tsp. finely chopped oregano
  • 1 tbs. finely chopped Italian parsley
  • 2 bay leaves
  • 14-oz. can petite diced tomatoes, well drained
  • 4 cups good-quality chicken stock
  • Parmesan rind (optional)
  • 2 15-oz. cans white beans, rinsed and drained 
  • 1 cup grated Parmigiano-Reggiano
Directions:
Step 1: Add the olive oil to a Dutch oven over medium heat. When the oil is hot, add the pancetta and cook until browned and crispy. Use a slotted spoon to transfer the pancetta to a paper-towel lined plate. Set aside. Add the onion, carrot, celery, and garlic to the Dutch oven. Cook, stirring occasionally, until the vegetables are softened -- about 8 minutes. Add the basil, oregano, parsley, red pepper flakes, and salt & pepper to taste.
Step 2: Add the drained white beans and diced tomatoes to the Dutch oven. Add the chicken stock, bay leaves, and parmesan rind (if using). Raise the heat to med-high and bring the soup to a boil. Reduce heat to low, cover, and simmer for 30 minutes. 
Step 3: After the soup has cooked, remove the bay leaves and parmesan rind (if using). Ladle the soup into serving bowls. Just before serving, sprinkle each bowl with 2 tbs. of the parmesan and some of the reserved cooked pancetta. Serve with warm bread on the side. I especially like toasted garlic bread.
This soup may be inexpensive to make, but youd never know it based on how good it tastes! The creamy white beans, aromatic vegetables, and parmesan work so nicely together. The red pepper flakes impart a subtle heat that I really enjoyed. And the pancetta? Its meaty flavor permeates the broth, and the little bits of cooked pancetta sprinkled on top provide a crunchy-salty punch of flavor. This is my kind of dish: easy to make, tons of flavor...and easy on the grocery budget too!

    The Enchanted Cooks Chicken Tortilla Soup featured in HomeAway Holiday Rentals Travel Cookbook

    Chicken Tortilla Soup

    Remember this delicious soup? Its the one I make in the slow cooker. Just looking at this now, makes me wish I was home and could make it. Instead Im in a hotel in another city and my crock pot wouldnt fit in my carry-on bag, so no soup for me.

    If I were vacationing in one of HomeAway Holiday-Rentals homes, you can bet Id be making this, though. In fact, they put together a cookbook full of tasty recipes from all over the world for their vacationers to take advantage of, and they selected my Chicken Tortilla Soup to be included. Im honored!     October Secret Recipe Club Lemony Chicken Noodle Soup from A Fit and Spicy Life

    Where has the year gone to? I just flipped the calendar, and its hard to believe that its already October! That means its finally almost time for "soup weather to arrive back in Texas. I love making a big pot of soup for dinner on chilly evenings, so Im always on the lookout for great soup recipes. Lucky for me, my assigned blog for this months Secret Recipe Club offered up plenty of great soup options. Mellissa from A Fit and Spicy Life lives in Minnesota -- where Winters are much colder than the ones we experience here in Texas. She has an amazing collection of healthy and flavorful soups, and I knew I had found a winner when I saw her Chicken Orzo Soup.

    I loved her addition of lemon and orzo, making this soup reminiscent of tangy Greek agvolemono soup. I had to make a few adjustments to her recipe based on ingredients  that I had on hand in my kitchen. Due to some car issues, I wasnt able to get to the grocery store to buy orzo...so I had to improvise a bit to use what I already had on hand. That means I had to use egg noodles instead of orzo. I also subbed a combination of yellow onion and garlic for leeks, used chicken breast instead of thighs, and added a bit of corn that was in my freezer. Luckily, I already had dill and lemons in the kitchen -- which are the essential ingredients that give this soup its unique flavor. 

    Lemony Chicken Noodle Soup

    Ingredients:
    • 1 tbsp olive oil
    • 1 small yellow onion, diced
    • 2 cloves garlic, minced or grated
    • 2 stalks celery, sliced
    • 2 carrots, peeled and chopped
    • 1 cup frozen corn kernels
    • 1 lb boneless, skinless chicken breast cut into bite-size cubes
    • 6 cups chicken broth
    • 8 ounces no boil egg noodles
    • 1 tbsp dill
    • 2 bay leaves
    • A few dashes hot sauce
    • Salt & pepper to taste
    • Juice of 1 lemon
    Directions:
    Step 1: Add the olive oil to a Dutch oven over med-high heat. Add the onion, garlic, celery, and carrot. Cook, stirring occasionally, until the veggies have softened a bit -- about 10 minutes. Season with salt & pepper to taste.
    Step 2: Add the diced chicken breast to the Dutch oven. Cook, stirring occasionally, until the chicken is browned on all sides. Add the chicken broth, corn, and bay leaves. Bring the soup to a boil. Cover, reduce heat to med-low, and simmer for 20-25 minutes. 
    Step 3: Add the egg noodles and cook until tender -- about 10 minutes. Just before serving, add the dill, hot sauce, and lemon juice. Stir well to combine and ladle the soup into serving bowls.
    This soup is so good...a comforting and filling complete meal in a bowl. The lemon juice and dill brought a unique flavor profile that elevated this soup above the usual chicken and noodle. I especially enjoyed the tart flavor that the lemon provided, and the addition of corn worked nicely with the carrots and celery. I cant wait to make this flavorful soup again during the upcoming cold-weather season!

    Spicy Vegetable Matzoh Ball Soup


    There are many reasons to embark on cooking projects. But last week, as unseasonable wintery winds were whipping through the cracks in our house, I had one main motivation: to cook meals that kept the stove and oven on as long as possible. Time for slow roasting, and batches of cookies. And soup.

    Matzoh ball soup has a heavy rotation in our household, especially during the winter months. The traditional version is fairly simple: dumplings in a clear dill-scented broth, with just a few carrots and parsnips and a handful of noodles. Its delicious, and especially welcomed when youve got a sore throat or some sniffles. But sometimes you want something a bit more interesting. This matzoh ball soup is chock full of vegetables and spicy with chile flakes. Its like your favorite vegetable soup, with the added bonus of some delicious dumplings.

    This batch makes a huge amount (I usually split it between two pots). Feel free to halve it, if youre not feeding an army, or make the full amount and freeze some.


    Spicy Vegetable Matzoh Ball Soup

    yields two large pots

    There is an ongoing debate in the matzoh ball soup community about floaters vs. sinkers: whether your dumpling is tender or toothsome. These fall on the latter side of the spectrum. I think that a more substantial matzoh ball makes a nice complement to the vegetables in this soup, but if you favor a lighter dumpling, just reduce the amount of matzoh meal by a few tablespoons.

    Soup:
    2-3 Tbsp olive oil
    2 onions, chopped
    4 shallots, minced
    6 cloves garlic, minced
    3-4 carrots, sliced
    1 sweet potato, peeled and cut in a 1/2" dice
    1/4 tsp cloves
    a few hefty pinches chile flakes (depending on how hot you like it)
    1 28-oz can chopped tomatoes
    12 cups vegetable or chicken broth (more, if needed)
    3 small zucchini, sliced into thick half-moons
    8 shiitke mushrooms
    2-3 cups broccoli florets
    1/4 cup chopped fresh basil (optional)
    salt and pepper to taste

    Matzoh Balls:
    3 Tbsp butter or oil
    5 scallions, chopped
    2 Tbsp broth
    4 large eggs
    1 1/2 tsp coarse salt
    1/4 tsp pepper
    1/2 tsp baking powder
    1 cup matzoh meal

    Heat the oil in a medium skillet. Saute the onions, shallots, garlic, carrots and sweet potato until the onions are soft and translucent. Add the cloves and chile flakes. Pour in the broth and tomatoes, and simmer for about 15 minutes.

    When you add the broth to the soup, prepare the matzoh balls: warm the butter or oil in a skillet over a medium heat, and cook the scallions until softened (this will just take a minute or two). Let cool somewhat. In a separate bowl, beat the eggs and broth with the spices, baking powder, and matzoh meal. Add the onions and their butter/oil, and chill in the refrigerator.

    Return to the soup: after the onions and such have been simmering in the broth and tomatoes for 15 minutes, add the zucchini, broccoli and shiitake mushrooms. Add more broth if needed. Simmer another 15 minutes. Take the matzoh ball dough out of the refrigerator (it will have been chilling about half an hour), and shape into small 1" balls, using either a small scoop, two spoons, or your hands (use some oil to keep it from sticking if you go this route). Plop these in the simmering soup as you shape them. Simmer another 30 minutes or so, stirring occasionally. You want the matzoh balls to be light and puffy and cooked through, and the vegetables to be very tender. When the soup is done, season to taste, and top with the fresh basil.

    How to Make Beetroot Soup Finnish Recipe Punajuurikeitto Borscht

    This is our Finnish version of a Red Beetroot Soup! Healthy & Good! What to eat with Red Beetroot Soup? Traditionally, we serve beetroot soup with sour cream on top with a slice of rye bread. 


     




    Ingredients 

    • 3 medium apple size beetroots
    • 2 large size potatoes
    • 1 finely chopped Onion
    • 1 celery stalk
    • 1 carrot
    • 1/2 a white cabbage
    • 1 parsnips
    • 1 leek 
    • Salt and pepper powder to taste
    • 2 can of beef broth
    • olive oil
    • 2 cloves
    • 1 bay leaf
    • parsley
    • dill
    • a dash of dry margarine
    • 2 tablespoons of tomato paste
    • garlic cloves finely chopped
    • 1 teaspoon of sugar
    • 2 tablespoons of red wine vinegar 
    • 1 tablespoon of sour cream

    Instructions:

    1. Wash, peel and chop potato, beetroots. parsnip, onions, carrots, celery stalk, white cabbage and leek

    2. Heat oil in a large pot over medium high heat

    3. Add and saute the chopped onions, potatoes, beetroots. parsnip, carrots, celery stalk, white cabbage and leek. 
    4. Add chopped parsley, dill, bay leaves and cloves. and a dash of dry margarine. Stir the mixture
    5. Add 2 cans of beef broth. Fill up the 2 cans of beef broth with water and pour it into the pot. Keep stirring
    6. Bring to the boil. Reduce heat to medium-low. Simmer, partially covered, for 45 hour or until vegetable is tender. 
    7. Add 2 large tablespoons of tomato paste, garlic, teaspoon of sugar, salt and pepper. Keep stirring
    8. Then add 2 tablespoons of red wine vinegar
    9. Season with salt and pepper to taste. Ladle soup into bowls. Top with sour cream. Sprinkle with chives. Serve.
