SundaySupper Trick or Treat Halloween Party Featuring Spooky Good Popcorn Snack Mix
I really like mixes like this, because theyre yummy and so versatile. Sub in your favorite Halloween-colored candy...this time, I opted to add Reeses Pieces and jujube candy corn, along with a drizzle of orange-tinted white chocolate and dark chocolate. The main thing is to have fun and let your imagination run wild. Easy to make, yummy to eat, and colorful? Thats a winning trifecta to me, people!
Spooky Good Popcorn Snack Mix

Step 1: Add 4.5 cups Corn Chex and 4.5 cups popped popcorn to the largest mixing bowl you have. Set aside while you make the caramel sauce. Add the following ingredients to a 4-cup measuring cup: 1 stick butter, 1 cup firmly packed brown sugar, and 1/4 cup light corn syrup. Microwave for 2 minutes. Stir well to combine, then add 1/4 tsp. baking soda. This will make the caramel foam up, so dont panic!
Step 2: Pour the caramel over the popcorn-Chex in the bowl. Stir carefully to evenly coat with the caramel mixture. Microwave for 5 minutes, stopping to stir at least twice during that time to completely cover the popcorn-Chex with caramel. Evenly spread the coated mixture onto a large rimmed baking pan topped with parchment or foil.
Step 3: Before the caramel sets, sprinkle Reeses Pieces and jujube candy corn (or regular candy corn) on top of the mix. Drizzle with orange-tinted white chocolate and dark chocolate. Put in the fridge to set...or if its cool out like it is in Texas today, set it outside for a few minutes to let the chocolate harden.
Step 4: Break the snack mix into bite-size pieces. To serve right away, place the mix in a fun Halloween bowl. If youre not serving it right away, store in an air-tight container so the mix stays crunchy and fresh. This makes about 10 cups of snack mix, but the recipe is easily halved or doubled to adjust to the size of your needs.
This snack mix is quite sweet, but isnt that what Halloween is all about? The peanut butter punch from the Reeses Pieces is really nice and pairs well with the caramel coating and the chocolate drizzle. This is a treat that kids of all ages will enjoy, so get ready for some compliments when you put a bowl of snack mix out!
