Autumn Apple Party for SundaySupper Featuring French Apple Cobbler with Cinnamon Maple Whipped Cream

This weeks #SundaySupper theme is perfect for ushering in the official start of Fall: Autumn Apple Party! I knew that I wanted to bake something for this edition of #SundaySupper, but I had two BIG requirements since this week was hectic because I started my new job. I wanted to make something easy that I could whip up in less than 30 minutes...and something that was portable so I could share it with my new co-workers the next morning. Being a Southern gal at heart, I knew that cobbler would do the trick...but not just any cobbler! My French Apple Cobbler with Cinnamon-Maple Whipped Cream features three kinds of apples, lots of cinnamon, and a double dose of pure maple syrup: its in the apples...and in the whipped cream!

There are two kinds of cobbler that I usually see served here in Texas. One features a top layer thats like flaky pie crust and not very sweet. The other features a sweeter cake-like topping. Thats my preferred type of cobbler, so I set out to find a recipe to start with as a guide. I quickly found a recipe for French Apple Cobbler at about.com Southern food. I used it as a jumping off point, but tweaked it quite a bit. It was so simple to make. The most time-consuming part was peeling and slicing the apples. I received a GREAT yellow Microplane Easy Prep Straight Peeler in a blog giveaway awhile back. Im officially in love with it...it easily peeled the six apples for this cobbler in about 5 minutes!

It may have been 80 degrees outside when I baked this cobbler on Thursday evening, but my kitchen smelled just like Fall as the cobbler cooked away...I just cranked the a/c and pretended like Fall had made its way to Central Texas. A gal can pretend, right?!?!? 

French Apple Cobbler 
with Cinnamon-Maple Whipped Cream

Step 1: Preheat oven to 375. Butter a 9x9 baking dish and set aside. To make the apple filling, combine the following ingredients in a large mixing bowl: 2 sliced Granny Smith apples, 2 sliced Pink Lady apples, 2 sliced Braeburn apples, the juice of 1/2 a lemon, 1 tbs. vanilla, 1/4 cup maple syrup, a pinch of salt, 1 tbs. high-oil cinnamon, 1/2 cup sugar, 1/4 cup packed brown sugar, and 2 tbs. all-purpose baking mix (I used Bisquick). NOTE: You should have 5-6 cups of sliced apples from the amount given above.


Step 2: Stir with a sturdy spoon until all the apple filling ingredients are thoroughly combined and the apples are all coated with the other ingredients. Pour the apple filling into the prepared pan and dot with 2 tbs. butter thats been cut into small cubes. NOTE: I used Land o Lakes butter with sea salt.


Step 3: Make the topping of the cobbler by combining the following ingredients in a large mixing bowl: 1 cup all-purpose baking mix, 3/4 cup sugar, 3/4 tsp. baking powder, 1/2 tsp. salt, 3 tbs. melted butter, 1 tbs. vanilla, and 1 egg. Stir until all the ingredients are combined. The consistency will be between a cookie dough and cake batter. Drop dollops of the dough on top of the apples and use a spatula to spread it over the apples. Dont panic if it doesnt completely cover the apples. As the cobbler bakes, it spreads out and cooks up really nicely!


Step 4: Sprinkle the batter with cinnamon sugar. I had some vanilla bean-infused sugar, so I sprinkled that generously on top, then added a generous amount of cinnamon on top of the sugar. Bake the cobbler for 30-40 minutes, until the topping is golden brown and the filling is bubbly. Youll be tempted to eat it as soon as its out of the oven, but do your mouth a favor and let the lava-hot apple filling cool off first. Thatll give you a pocket of time to make the whipped cream. Your patience will be rewarded...trust me!


Step 5: To make the whipped cream, add the following ingredients to a bowl: 1 cup heavy cream, 1 tbs. vanilla, 1/2 cup maple syrup, 1 tbs. high-oil cinnamon, and 1/3 cup powdered sugar. Whip until stiff peaks form. In case youre wondering why I add powdered sugar, I find it helps stabilize whipped cream and allows it to stay whipped for a longer period of time. When youre ready to serve, dish the cobbler into shallow bowls and spoon some of the whipped cream on the side.  By the way? Blue Bell Homemade Vanilla ice cream is also an appropriate cobbler pairing in Texas as well.


This cobbler was so yummy! The apples cooked up perfectly without getting mushy, and the topping was pillow soft. The maple flavor wasnt overpowering, and it paired very nicely with the cinnamon in the cobbler and the whipped cream. The whipped cream was decadent, with a pronounced maple and cinnamon flavor. I cant wait to make this again this Fall!
