A Stress Free New Years Eve Celebration for Two Featuring Creamy Shrimp Polenta Bites
Now that Christmas is over, its time to focus on the next celebration on the calendar: New Years Eve! Some years we go out for a late dinner at a fancy restaurant and ring in the New Year with a big crowd of festive guests. Other years, we take a low-key approach and watch the Times Square ball drop on TV just the two of us. If youre planning to celebrate at home this year, Ive got a fabulous no-stress menu for you featuring a festive bubbly cocktail, a lovely array of chocolate-based treats...and an elegant appetizer thats so simple to whip up. Who says elegant has to be complicated?!?!?
Creamy Shrimp Polenta Bites
a Weekend Gourmet Original
Ingredients:
- 1 tube Friedas Organic Basil & Garlic Polenta
- 1 tbs. olive oil
- Salt & pepper to taste
- 4 ounces cream cheese, softened
- 1 tbs. chopped basil
- 2 cloves garlic, finely chopped or grated
- 1 tbs. tomato paste
- 1 tbs. Cajun seasoning [NOTE: I used Paul Prudhommes Seafood Magic.]
- 8 large boiled shrimp, peeled and deveined
- 1/2 cup Friedas Tomato Pesto
Step 1: Make the cream cheese topping by combining the cream cheese, basil, garlic, tomato paste and Cajun seasoning. Stir well to thoroughly combine and refrigerate until its time to assemble the appetizers. NOTE: This can be done up to a day ahead.
Step 2: Heat the olive oil in a large non-stick skillet over med-high heat. Slice 8 1/2 -inch slices of polenta from the tube. Add to the hot pan and cook until golden brown on both sides. This took about 5-6 minutes per side for me. Sprinkle with salt and pepper to taste.
Step 3: Let the polenta rounds cool slightly. Spread with 1 tbs. of the cream cheese mixture. Top the cream cheese with a boiled shrimp and a teaspoon of the tomato pesto. Plate the bites on a pretty serving plate and serve. I opted to alternate the polenta rounds with extra boiled shrimp topped with a bit of cocktail sauce.
These appetizers are amazing...full of flavor and gorgeous too! The basil and garlic in the cream cheese works perfectly with the seasoning in the polenta, and the tomato paste works well with the tangy tomato pesto. These two-bite appetizers are the perfect combination of simplicity and elegance.
I created a simple and fun Ruby Sparkler cocktail to pair with my polenta bites. It features Mumm Cuvee M sparkling wine...because you MUST have bubbles on New Years Eve! We first discovered Mumm sparkling wines during a visit to Napa Valley a few years ago, and theyve been some of our favorites since. Cuvee M is slightly sweet and selected by Mumm as being an ideal pairing for hors doevres and spicy food. It has notes of strawberry and vanilla in its flavor profile. Its delicious on its own, but I wanted to create a fun drink for us to enjoy. To make my Ruby Sparkler, simply add equal amounts of pomegranate juice and well chilled Mumm Cuvee M to a wine glass. Then, float 3-4 frozen organic raspberries in each glass. Thats it...simple and sweetly tart, its a refreshing way to celebrate!
I wanted to round out my celebration menu with something sweet, but I wasnt in the mood to spend hours baking. Luckyfor me, Godiva and the local bakery came to my rescue! Godiva recently introduced a fantastic line of truffle flights. Each flight contains six truffles that center on a flavor theme, including: Ultimate Dessert Truffle Flight, Nut Lovers Truffle Flight and Cake Truffle Flight. Each flight features six flavors that progress from lighter flavors to stronger flavors and textures. I added a couple of truffles from the Ultimate Dessert and Cake flights to my dessert plate: Birthday Cake, Chocolate Lava Cake, Creme Brulee and Salted Caramel. The truffles were so flavorful and decadent! I rounded out my simple dessert plate with classic chocolate-dipped strawberries and small shortbread cookies from a local bakery...I even dipped some of them in chocolate too!There you have it...a delicious celebration menu that tastes great, looks festive and is guaranteed to be 100% stress free! I hope youll give my celebration menu a try for New Years Eve...or perhaps another celebration-for-two thats on your calendar for 2014. Its sure to be a hit!!

Wrapping Up Driscolls Berry Week with Baked Blueberry Lemon Doughnuts and a Giveaway for TWO FREE Driscolls Berry Coupons!!
Its time to wrap up Driscolls Berry Week with a sweet finale! Sunday is also World Baking Day, so the first thing that came to mind to celebrate both of these fun events was to make a batch of baked doughnuts using Driscolls sweet and juicy blueberries! I love my doughnut pan, so Im always looking for fun new ways to use it. When I thought about making blueberry doughnuts, lemon immediately came to mind. Its a perfect combination in my book! I looked around for a recipe that featured light, healthy ingredients and found a great recipe to tweak that features yogurt to keep the doughnuts nice and moist. The glaze combines crushed blueberries, lemon juice, and lemon zest for a pronounced fruit flavor. These doughnuts were love at first bite for me!

To amp up the blueberry flavor even more, I used Chobani blueberry Greek yogurt. The batter is flavored with both lemon extract and vanilla bean paste from Nielsen-Massey. These gems were literally ready for the oven in about 10 minutes. While they baked, I whipped up the sweet-tart glaze. These can be ready -- start to finish -- in just over 30 minutes. They make a great dessert or evening snack...and theyre also great for a leisurely weekend brunch. If you love blueberries, youll go nuts for these doughnuts. My recipe makes 6 doughnuts, but feel free to double the ingredients to feed a larger crowd.

Baked Blueberry-Lemon Doughnuts
adapted from King Arthur Flour
Step 1: Preheat oven to 375, and spray the wells of a doughnut pan with cooking spray. Prepare the batter by adding the following dry ingredients to a mixing bowl: 1 cup flour, 1/2 cup sugar, 1 tsp. baking powder, and 1/4 tsp. salt. Whisk to combine and add the following wet ingredients to the bowl: 1 small container Chobani blueberry Greek yogurt, 1 large egg, 2 tsp. vegetable oil, 1 tsp. Nielsen-Massey lemon extract, and 1 tsp. Nielsen-Massey vanilla bean paste (or vanilla extract).
Step 2: Mix just until combined, being careful not to overmix. Add 3/4 cup Driscolls blueberries and the zest of one small lemon. Stir gently to combine the zest and berries into the batter, being careful not to break up the berries. Spoon the batter into the doughnut pan and bake for 15 minutes, until golden brown on top.
Step 3: Make the doughnut glaze. Add 1/3 cup blueberries to a small bowl and crush with a fork. Add the juice and from 1 small lemon and enough powdered sugar to make a thick glaze. Your mileage may vary, but I added about 1 cup of powdered sugar to get the consistency I was looking for. Its a gorgeous purple-pink color!
Step 4: Let the doughnuts cool in the pan for 5 minutes before removing them. This will allow them to release from the pan much easier. These doughnuts are a bit fragile when warm, so I found it easiest to place them on foil and spoon the glaze over the warm doughnuts. Let them cool until the glaze is set, then place on a serving platter.
Mercy, are these a little bite of blueberry heaven! Thanks to blueberries and blueberry yogurt in the batter -- and a healthy dose of blueberries in the glaze -- these doughnuts pack a huge blueberry punch! The lemon stands up to the blueberry quite nicely, but doesnt overpower. The yogurt keeps them moist and delicate, and the fact that theyre baked saves calories and fat over takeout doughnuts. I like knowing exactly what I put into these!

The SundaySupper Free for All Featuring Sugar Free Strawberry Meyer Lemonade
This week, the #SundaySupper theme is Free for All...where were sharing recipes that are fat-free, sugar-free, gluten-free, dairy-free...you get my drift! Were being hosted by Beate at The Not So Cheesy Kitchen. Michael and I dont have any health issues that require us to eat a special diet, so I had to think a bit to come up with a recipe to share here today. We do have family members who are diabetic and watching their sugar intake, so I used that for my starting point. Then, an idea hit me: other than a glass of wine, I try not to drink calories. Lord knows being a food writer means I eat plenty of calories...no need to drink them too!

One of Michaels favorite Summertime beverages is lemonade, so I decided to make a fun and tasty sugar-free lemonade featuring in-season strawberries and Meyer lemons. What I came up with was perfectly sweet-tart Sugar-Free Meyer Lemonade.

I used a combination of regular lemons and Meyer lemons, because I had some Meyer lemons in my kitchen. They are less acidic than regular lemons, which makes for a very smooth lemony flavor. I sweetened my lemonade with Splenda, but feel free to use Equal or Stevia instead if thats the sweetener that you prefer. Just keep the ratio of sweetener to lemon juice and water the same. Wait until you hear my two secret ingredients for making this lemonade really POP with flavor!

Sugar-Free Strawberry Meyer Lemonade

Step 1: Cut 1 pint of strawberries into quarters. You can puree them in your blender of food processor, but what I do is put the berries in the bottom of my pitcher and use my immersion blender to puree them. Its less messy and really easy! Feel free to push the blended berries through a fine sieve if you want, but I dont...I like the texture that it brings to this lemonade. This is what it looked like after I used the immersion blender to liquefy the strawberries.
Step 2: Add the following ingredients to the strawberries in the pitcher: the juice of two (2) large lemons and two (2) Meyer lemons, 1 cup Splenda that measures like sugar (comes in a large bag), 1 tsp. vanilla bean paste of vanilla extract, and 5 cups cold water. Stir well to combine, until the sweetener dissolves. Serve in glasses...straws are optional, but fun!
Man, is this lemonade a winner! Theres no artificial aftertaste, and the ratio of sweet and sour is perfect. In case you missed it, my secret ingredient is a bit of vanilla bean paste. I love how vanilla matches with berries, and it worked really well here. It was very subtle, but I liked the background flavor. This is such a fruity and refreshing drink, and the color is absolutely gorgeous.
Now for my other top-secret tip: to keep this lemonade from getting watered down by melting ice, I place 4-5 frozen strawberries in each glass before pouring the lemonade. By the time the lemonade is gone, the berries have mostly thawed...leaving you with a strawberries to eat at the end! They look really pretty floating in the glass too...and a strawberry added to the rim of each glass lets your guests know why your lemonade is bright red.
I hope youll give my sugar-free strawberry lemonade a try very soon. The only calories in this drink come from the lemon juice and the strawberry puree. Restaurant Spotlight Johnny Carinos Introduces Their Expanded Gluten Free Menu

Johnny Carinos Italian restaurants recently expanded its gluten-free menu to a whopping 23 items, including items from their kid’s menu. With demand for gluten-free food options on the rise, theyre introducing gluten-free versions of fan favorites like the Skilletini and Spicy Shrimp and Chicken. The new gluten-free menu has been confirmed by Analytical Food Laboratories as meeting FDA guidelines to be considered gluten-free. This extensive process took place under the guidance of Vice President of Culinary Development Chris Peitersen. “I developed the new recipes by utilizing gluten-free ingredients, consulting nutritional experts and working in conjunction with Analytical Food Laboratories to conduct the actual scientific testing of the menu items,” says Peitersen, who started with the company as a line cook at the very first Johnny Carino’s in 1995.
Creating gluten-free zones in their kitchens and using separate utensils for handling gluten-free dishes are just some of the steps the Texas-based chain has taken to prepare their new gluten-free menu items. The new menu items are now available at all participating restaurants nationwide, and Johnny Carinos recently invited us out to try out some items from the menu.
Michael and dont have issues with gluten, but we were very curious to see how the gluten-free items stacked up against their traditional menu items. We were pleasantly surprised! We ordered three items from the gluten-free menu, a shared bowl of soup and two salads. We opted to try a bowl of their Italian Chili. It was zesty, flavored with Italian sausage, diced tomatoes, kidney beans, diced onions, and select herbs. It came to the table garnished with parmesan cheese and fresh parsley. We really enjoyed this soup...it was just spicy enough and very hearty. As great as this was on a warm Summer evening, I cant wait to try it as the weather turns cooler in a few months.

Michael opted to try the beautiful and tasty Italian Wedge Salad. This creative salad features a generous iceberg lettuce wedge topped with applewood smoked bacon, candied pecans, gorgonzola, Roma tomatoes and green apple. It came drizzled with roasted garlic ranch dressing. This salad was bursting with flavors and textures. We absolutely loved it!
I selected a main dish salad from the gluten-free menu for my entree, the Honey-Pecan Crusted Salmon Salad. This salad features a wood-fired salmon fillet topped with a sweet honey-pecan topping. The salmon was served on a bed of romaine, with sun-dried tomatoes, tomato wedges, purple onion and a refreshing lemon vinaigrette.
I really enjoyed the sweet-savory flavor of this salad! It was the perfect dinner for a warm Texas evening. The salmon provided a generous portion of lean protein, and the big-flavor toppings brought a great mix of flavors and textures.
As much as we enjoyed the gluten-free menu items we tried, we also sampled a few items from Johnny Carinos extensive traditional menu as well. We just couldnt resist a mini order of their Sicilian Fire Sticks. These culinary firecrackers feature tomato-basil tortillas rolled around Italian sausage, chicken, bacon, roma tomatoes, jalapenos and Italian cheeses. These addictive little bites were served with a spicy marinara.
As much as we enjoyed the gluten-free menu items we tried, we also sampled a few items from Johnny Carinos extensive traditional menu as well. We just couldnt resist a mini order of their Sicilian Fire Sticks. These culinary firecrackers feature tomato-basil tortillas rolled around Italian sausage, chicken, bacon, roma tomatoes, jalapenos and Italian cheeses. These addictive little bites were served with a spicy marinara.
We really loved this appetizer! We also decided to try one traditional pasta dish, the Lemon-Butter Shrimp Pasta.This is NOT a gluten-free item, but those with gluten sensitivities could certainly substitute gluten-free pasta. The shrimp were plump and sweet, and the lemon-butter sauce had a perfect acidic kick. The dish was topped with diced tomato and green onion. As you can see, the portion was quite generous!

Book Review of Gluten Free Made Easy Featuring Peanut Butter Power Balls

Today, I’m sharing my thoughts about a new cookbook that’s just hit the shelves. Gluten-Free Made Easy is written by food blogger and cookbook author Christi Silbaugh and Michele Vilseck. Christi lives in San Diego and has been eating gluten-free for several years. Her blog is Mom, What’s for Dinner, and it focuses on tasty gluten-free recipes. I’m especially thrilled to be spotlighting this cookbook, because I’ve met Christi in person and witnessed her vibrant personality and fun-loving nature firsthand! We met at Foodbuzz Fest in San Francisco in 2012, and we hit it off right away. We were part of a fun foursome of food bloggers who hung out together that weekend. We’ve stayed in touch via our blogs since then, and I was so thrilled to have a chance to receive an advance preview copy of her cookbook a couple of weeks ago.
Gluten-Free Made Easy is comprised of recipes that are family-friendly and easy to make – whether you eat gluten free or not. We don’t have dietary restrictions that require us to avoid gluten in my household, but I still found tons of eye-catching and mouthwatering recipes as I flipped through the book. When I was trying to decide which recipe to feature today, I had such a hard time. Would I go with something savory like "Kung Foo" Korean Beef , something sweet like the unique Avocado Cream Cheese Cookies…or maybe a portable breakfast or snack to tote to work? The second I saw her Peanut Butter Power Balls, I knew I had found just what I was looking for. Easy to make, healthy, delicious…and portable? Sign me up! These protein-packed snacks can be assembled in less than 15 minutes. Store them in the fridge in a covered container, and you’ve got the perfect on-demand breakfast or post-workout snack.
Peanut Butter Power Balls
from Gluten-Free Made Easy

Ingredients:
- 1 cup peanut butter [NOTE: I used crunchy peanut butter]
- 1 cup honey
- 3 cups gluten-free oats [NOTE: I used Bob’s Red Mill Gluten-Free Rolled Oats]
- 1 cup dried fruit or nuts [NOTE: I used dried cranberries]
- ½ cup ground flaxseeds
- 1 cup mini chocolate chips
- 1/3 cup vanilla protein powder (optional)
Directions:
Step 1: Add the peanut butter and honey to a large mixing bowl. Using a sturdy spatula or spoon, blend the honey and peanut butter until totally combined.
Step 2: Add the gluten free oats, dried fruit or nuts, ground flaxseeds, chocolate chips, and protein powder to the bowl. Using a hand mixer or a very sturdy spoon, mix the ingredients until they’re thoroughly combined with the peanut butter-honey mixture.
Step 3: Roll the mixture into balls roughly the size of ping pong balls. If you keep your hands slightly moist, it will help the job go much easier. Place the rolled power balls on parchment paper. To store, layer the peanut butter power balls on layers of parchment in an airtight container.

I made these tasty little bites on Sunday night so I’d have a portable weekday breakfast or quick after-work snack on hand for this week. These two-bite treats are so good, and I love knowing that they’re packed with protein and fiber! The peanut butter provides creaminess, the honey provides a touch of sweet, and the oats provide an earthy flavor and texture. The dried cranberries provide a tart chewiness….the chocolate chips add a touch of decadence. These babies are going into my regular rotation – they’re too tasty and simple not to!

Gluten Free Sesame Crackers

Years ago, my friend Emily was freaking out over an international trip she and her husband were planning, and the stress it would put on their tight finances. She mentioned these gnawing fears to an older neighbor, who gave her these words of wisdom: money is for travel and education. And shes so right.
As much as I am reduced to obsessive researching and wavering over any purchase totaling more than about $25 (beyond food), I know that those are the two categories where you must unequivocally open your purse strings. Its what the purse is for. Theres no way around it — travel and education pretty much always come with a hefty price tag. But paying the price tag opens up the world to you, and makes your life so much richer for it.
A few months ago, my dear friend (and former housemate) was faced with a likely downsize at work. So he decided to opt for the most awesome of responses: hes packing up his belongings, renting out his house, and spending a full year traveling the world with his love. Morocco, Ghana, Italy, Croatia, Russia, China, India, Vietnam, New Zealand. And more. They got it right, and Im so happy for them. And just a tiny bit fiercely jealous.
But the downside to this great idea is that some people I like a lot are going to be pretty far away. So when my friend mentioned a brief window in his packing/working/appointment-making/task-checking life yesterday, I jumped at the chance to come over. But I couldnt come empty handed. Since he offered to provide the fire and cocktail, I figured I could bring the cheese and crackers.
But how could I bring store-bought crackers for such an occasion? And especially, how could I bring store-bought crackers when my friend is gluten-free? GF crackers are often off-the-charts expensive, and/or of an entirely different species. Theyll be rice-based, or just a small paving of seeds — good in their own right, but not the traditional cocktail hour cheese accompaniment. Also, who can bear spending $6 for a box of what is, essentially, flour and water? Well, also butter.
I was first converted to the cracker-making gospel by my friend Ivy, who kindly gave me some feedback on going gluten-free (namely too much cornstarch renders a cracker "thirsty," and butter gives a nicer flaky texture than olive oil). I also threw in some sesame seeds, because I love them, baked them up, and grabbed an assortment of cheeses and a nice crisp apple. And we sat down in front of the wood stove while my dog chewed some kindling, and ate our cheese and flaky, savory, delicious crackers, and drank a toast to the world. I hear its lovely.

Gluten-Free Sesame Crackers
yield will vary depending upon cracker size, but should be ~3 dozen
4 1/2 ounces (a heaping cup) brown rice flour
2 ounces (~1/2 cup) sorghum flour
2 ounces (~1/3 cup) cornstarch
1 teaspoon baking powder
3/4 teaspoon coarse salt (plus additional for sprinkling)
1/2 teaspoon xanthan gum
6 tablespoons cold butter, cut into pats (you can substitute shortening for a vegan version)
3 tablespoons sesame seeds (or a bit more, if you like it extra seedy)
~1/2 cup cold water
Preheat your oven to 400° Fahrenheit. Take out two cookie sheets, a rolling pin, and a few sheets of parchment paper.
In a food processor or large bowl, mix together the rice flour, sorghum flour, cornstarch, baking powder, salt, and xanthan gum. Add the butter, and pulse (if using a food processor) or cut with a pastry cutter or two knives until its reduced to little oatmeal-sized bits (dont over-process, as you want your crackers to be flaky). Turn the mixture into a large bowl, and mix in the sesame seeds. Add the water, starting with a scant half cup at first and adding more as necessary, until the mixture comes together in a nice ball of dough.
Divide the dough in half. Leave half in the bowl (covered, so it doesnt dry out), and place the other dough ball between two sheets of parchment paper. Roll out with a rolling pin until its quite thin, ~1/16th-inch. Cut into cracker shapes of your choosing (you can use a pizza wheel to cut squares or rectangles, or make things more difficult for yourself and cut out rounds and re-roll the scraps). Place the crackers on a parchment-lined sheet (you dont need too much space between), dock them a few times with a fork so that they dont puff up, and sprinkle with bit of additional salt. Bake until browned, ~15 minutes. Let cool slightly, then serve with cheese to celebrate world travel.

Passover 2013 Russian Gefilte Fish Gluten Free Matzo

The downside of writing about food is that you have to start thinking months in advance. In order to make publication deadlines, youre pitching springtime stories in the midst of blizzards, talking about Thanksgiving food while youre still on summer break. Which is all to say Ive been thinking about Passover foods for some months now. But I am not remotely sick of it. In fact, Im all the more excited for the celebration.
This year I looked into restaurant Seders around the country, for those not interested in hosting their own (and for those who are, there are some good ideas on those menus). I taste-tested gluten-free matzo, and found a traditional way of making gefilte fish (along with a beautiful story of growing up in the Soviet Union).
For my own meal, Im planning on making this delicate and lightly smoky gefilte fish, and the vegetarian dishes from this Sephardic-inspired Passover dinner. There will be appetizers, Manischewitz spritzers, and a little bit of metaphorical rebirth. Because even though its something Ive been thinking about for months, I could always use a bit more.
