Mom Made Foods Spotlight Featuring Taco Rice Skillet with Mini Meatballs

I recently had the chance to try out a great line of healthy kid-friendly foods from Mom Made Foods. Although the company is geared toward providing healthy and delicious foods that kids will enjoy, I can vouch that kids of all ages will enjoy these all-natural products! Founder Heather Stouffer visited San Antonio a few weeks ago, so I had the chance to sit down and chat with her about her company. She was a doll...so much fun to talk with. She started Mom Made Foods when she became a mom and found the selection of healthy kid-friendly convenience foods was sorely lacking. She started her company because she believed that convenience foods didnt have to be unhealthy and filled with preservatives. Mom Made products are made with organic ingredients and meat thats free of antibiotics. 

The Mom Made Foods product line includes Munchies, Meals and Bites...all of which are perfectly portioned to fit small hands. Munchies are pastry pockets filled with goodies like pizza toppings and chunky apple filling, Meals include Spaghetti with Turkey Meatballs and Cheesy Mac, and Bites include a variety of fun and tasty bite-sized mini meatballs. I absolutely flipped for the Beef & Cheese Meatball Bites and knew that I had to create a family-friendly recipe that featured them! What I came up with was a very tasty and oh-so-easy Taco Rice Skillet with Mini Meatballs. It features all of my favorite taco flavors in a delicious one-dish dinner that kids of all ages will love. 
The base of the skillet is made with a store-bought Spanish rice mix, corn, green chile tomatoes and meatballs. Its topped with cheese and my favorite taco fixings. Its easy to tailor the recipe to fit your familys tolerance for spice. If you have little ones who like their food less-fiery, simply use mild chile tomatoes and pico de gallo. Dont like avocados? Sub in sliced black olives if you prefer. Have fun with it and top it with your familys favorites!

Taco Rice Skillet with Mini Meatballs

Ingredients:
  • 1 tbs. olive oil 
  • 1/3 cup chopped purple onion
  • 1 cup frozen corn kernels
  • 1 1o-ounce can diced tomatoes with green chiles
  • 1 5-ounce package Spanish rice [Note: I used Mahatma]
  • 1 8-ounce package Mom Made Foods Beef & Cheese Meatballs
  • 1 2/3 cup water
  • 1.5 cups shredded co-jack cheese
  • 1/3 cup store-bought pico de gallo
  • 2 green onions, thinly sliced
  • 1/2 small avocado, peeled and diced
  • 1 cup broken tortilla chips
  • Sour cream drizzle: 1/2 cup sour cream, 2 tbs. milk, 1 tsp. dried cilantro and lime juice to taste
Directions:
Step 1: Add the olive oil to a non-stick skillet with high sides and heat over med-high heat. Add the onion and cook until the onion is softened. Add the rice mix, water, tomatoes (juice and all), and corn. Stir to combine and bring to boil. Carefully arrange the mini meatballs on top of the rice. Cover and cook for 20 minutes.
Step 2: When 20 minutes have passed, turn off the heat. Sprinkle the cheese on top, recover and let sit while you prep the topping ingredients. This allows the cheese to melt and the rice to absorb any extra liquid.
Step 3: Make the sour cream drizzle by combining all of its ingredients in small bowl. Remove the lid from the casserole and sprinkle the green onions, avocado, pico de gallo and tortilla pieces on top of the cheese. Just before serving, drizzle the sour cream mixture on top. To serve, scoop into bowls.
This is a fabulous one-dish meal that everyone will love! The rice is slightly spicy, and the corn and tomatoes give it some texture. We loved the bite-sized meatballs, which tasted great and were the perfect size for easy eating. The topping contained all my favorite taco ingredients...creamy avocado, spicy pico de gallo and cooling sour cream! We crushed extra tortilla chips on top of our bowls to maximize the crunch...thats optional, but highly recommended. 

These versatile meatballs are tender and flavorful, and theyre very versatile. We also enjoyed them in pasta dishes and as a quick and healthy pizza topping. HEB ConAgra Meal Maker Challenge Week 1 Salsarific Taco Skillet Featuring HEB Smoky Citrus Salsa HEBMeals

Welcome, everyone, to Week #1 of the H-E-B/ ConAgra Foods Meal Maker Challenge. For the next five Sundays, ten Texas food bloggers -- including yours truly -- will be sharing lots of great easy family meal ideas. All featured recipes contain no more than seven ingredients and are ready to eat in 30 minutes or less. These recipes are ideal for the upcoming back-to-school rush, easily feeding a family of four. Each weeks recipes are built around a theme ingredient thats an H-E-B or ConAgra product. Just wait until you see what I have for you this week!

This weeks theme ingredient is H-E-B Salsa. There are several different flavors to choose from, but the Smoky Citrus immediately caught my eye. Flavored with smoky chipotle chile and lime, I knew it was just the flavor profile I was looking for. I knew that I wanted to make a skillet meal, because they are ideal for busy cooks since you can cook and serve the meal right from your pan. That means fewer dirty dishes during the cooking process and less time cleaning up later...a win-win scenario in my book! I came up with my quick-cook Salsarific Taco Skillet, which combines all my favorite Tex-Mex flavors in one bite!
Lean ground beef is flavored with the salsa, then pre-cooked Spanish rice and flavorful canned borracho beans are added. Then the mixture is topped with cheese and crunchy, colorful tortilla strips. A ramekin of cooling sour cream is served right in the skillet for those who want to top their serving with sour cream. I also like to serve the remaining salsa on the side for those who want to spoon more of it on top. Wait until you see how simple this dish is to whip up!

Salsarific Taco Skillet
A Weekend Gourmet Original

 Ingredients:
  1. 1 cup H-E-B Smoky Citrus Salsa
  2. 1 lb. 93% lean ground beef
  3. 1 package H-E-B frozen pre-cooked Spanish rice
  4. 1 can H-E-B Borracho Beans with Shiner Bock
  5. 1 cup shredded cheddar cheese blend
  6. 1 cup Fresh Gourmet tri-color tortilla strips
  7. 8 ounces light sour cream
Directions:
  1. Spray a large non-stick skillet with cooking spray over medium heat. Add the ground beef and salt & pepper to taste. Cook until the meat is browned, then add the salsa. Stir to combine and cook the mixture for 2-3 minutes, until thickened.
  2. While the meat and salsa cook, prepare the Spanish rice according to package directions. Add the rice to the skillet, along with the can of borracho beans. Stir well to combine all ingredients, and cook until heated through.
  3. Turn off the heat. Make a well in the center of the pan for a small ramekin; place the ramekin in the well. Sprinkle the perimeter of the skillet around the ramekin with the cheese and the tortilla strips.
  4. Remove the skillet from the heat. Just before serving, spoon the sour cream into the ramekin. To serve, spoon some of the taco mixture into bowls. Top each serving with sour cream and more of the salsa, if desired.
We really loved this quick meal! The spice level is quite moderate, but those who like a more pronounced heat can simply spoon more of the reserved salsa on top. The cheese and sour cream provide a nice cooling effect to the salsa, and the crunchy tortilla strips provide texture and an earthy corn flavor. Add it up, and youve got a meal that the whole family will love. This meal will easily feed four, and youre likely to have some left for lunch the next day too.

Introducing Taco Bells Delicious New Cantina Steak Burrito

You may not know this about me…but I enjoy a fast food meal on occasion, and one of my fast food cravings is Taco Bell. Granted, I don’t indulge in it too often these days since I cook most of our meals…but I have to say that their Doritos Locos Taco Supreme is one of my favorite guilty pleasures! My admiration for Taco Bell goes back to when I was in college in the late 80s. My girlfriends and I had very little money in those days, but we needed to fuel our late-night sorority adventures…errr...study sessions! For only a little bit of money, we could enjoy several items from their inexpensive menu. To this day, Taco Bell equals comfort food from my youth. That’s why I was very excited when DailyBuzz Food and Taco Bell offered me the opportunity to try the Cantina Steak Burrito from their new Cantina Bell menu, then come here and share my thoughts about it with you.

Taco Bell’s Cantina Menu is developed by Miami-based Chef Lorena Garcia. The Cantina Steak Burrito features strips of citrus-marinated grilled steak, fresh guacamole made from Haas avocados, black beans, corn and pepper salsa, Latin-sesoned rice, fresh pico de gallo, and a tangy cilantro sauce. These ingredients bring exciting new flavors to the Taco Bell experience. One look at this burrito showed me that this wasn’t the Taco Bell experience of my college days: this burrito is kicked up and bursting with fresh flavors! I stopped in to pick up a Cantina Steak Burrito over the weekend for a quick post-shopping lunch. My first impression was that this burrito was large – and quite hefty! Taco Bell definitely didn’t skimp on the filling! The $4.99 price is a bit higher than the usual Taco Bell price point, but it was a very good deal considering the size of this burrito and the quality of the ingredients! I headed home and cut my burrito in half so I could examine the ingredients before digging in. The pieces of steak were chunky and plentiful, and the ratio of beef to the other ingredients seemed pretty good. It would have been disappointing for my steak burrito to have 2 or 3 lonely pieces of meat, but that wasn’t the case.

I peeled the wrapping from one half of the Cantina Steak Burrito and dug in. The tortilla was nicely toasted and evenly browned, and the steak was flavorful and tender! The cilantro sauce is tart, but it complimented the rest of the ingredients nicely without overwhelming them. I enjoyed the inclusion of guacamole, black beans, and corn…these items really gave the burrito a fresh, vibrant taste! I could only eat half of the burrito, but the other half reheated very well later that evening. My only suggestion for improvement would be to reduce the amount of rice. It was flavorful, but there was too much of it. Of course, this could have been simply because the employee who built my burrito had a heavy hand.

Overall, I was very impressed with the quality of Taco Bell’s Cantina Steak Burrito. The flavor was fresh, and the portion size was very generous. I would definitely order this burrito again, and I look forward to trying the other Cantina Menu items...the Grilled Chicken Cantina Bowl looks especially yummy to me! The next time you’re craving Mexican and don’t have time for a sit-down meal, I would encourage you to give Taco Bells Cantina Steak Burrito a try!
