Pillsbury Baguette Chips Giveaway and Creamy Cajun Crawfish Dip
I’ve got a super-busy few days coming up, friends: my birthday is Friday, we have a family reunion to attend nearby in New Braunfels this weekend, and I’ve got my Eat St. television tapings with Cooking Channel on Sunday and Monday afternoons. I’m going to be moving a mile-a-minute between now and next Tuesday, but it’s all such fun and exciting stuff that I’ll manage to fit it all in somehow! That means I might be a bit off-the-radar this weekend...but I’ll make sure to share all the fun with y’all next week!! Just so you know, I’ll likely leave out pictures of me in my bathing suit tubing on the Guadalupe River...but you know how that goes.
It dawned on me yesterday that I haven’t done a giveaway in here in quite a while...so I’m going to rectify that situation today! General Mills, via MyBlogSpark, recently sent me some of their new Pillsbury Baguette Chips to try, then share my thoughts with you. These snacks are sliced from oven-baked bread and topped with flavorful seasonings. They come in two varieties: Italian Cheese & Herb and Cheddar Sundried Tomato. I enjoyed both flavors in a variety of ways over the past couple of weeks: as an after-work snack with cheese, a topping for salads, and with a flavorful dip as an appetizer. If I had to pick a favorite, it would be the Italian Cheese & Herb...but both are really good!

These little baguette chips have one other good thing going for them: they contain 50% less fat than traditional potato chips, and each generous 21-piece serving is just 130 calories! I had some leftover ingredients in my kitchen from when I made my Creamy Shrimp Egg Rolls last week. I decided to use the extra ingredients to whip up a tasty dip to pair with these flavorful chips. Inspired by our upcoming trip to New Orleans next month, I created Creamy Cajun Crawfish Dip for us to enjoy before dinner earlier this week. This warm dip is creamy, spicy, and topped with a generous layer of melted cheese. Its flavors pair perfectly with both varieties of this crispy baguette chips!

Step 2: Stir the ingredients well, until everything is thoroughly incorporated and no white streaks of cream cheese show. Transfer the dip mixture to the gratin dish and top with Monterey jack cheese.
Step 3: Bake until the cheese is melted and the dip is bubbly, turning the dish around after about 10 minutes. For me, it took about 20 minutes to bake this dip. Place the gratin dish on a serving plate, and scatter the Pillsbury Baguette Chips around the platter. Dig in!
This dip is spicy-good! It’s creamy and spicy...and the layer of ooey-gooey cheese takes it right over the top! This dip can also be served with tortilla chips or slices of garlic bread on the side.
How would you like to try some of these yummy Pillsbury Baguette Chips for yourself? One of you is going to win a prize pack containing three bags of both flavors: Italian Cheese & Herb...and Cheddar Sundried Tomato! Pillsbury Grilled Pizza BlogSpark Featuring Aye Carumba! Mexican Grilled Chicken Pizza
If you’re like us, Pizza Night is a common occurrence in your house! Sometimes – especially on Fridays – we chill out and have pizza delivered, but I love making pizzas at home too! I love to use my creativity to come up with unique flavor combinations. I have never made homemade pizza dough, so I rely on a variety of ready-made dough options…including Pillsbury’s artisan whole-wheat pizza dough. Have you ever thought about keeping your kitchen cool and cooking your pizza on the grill? With Summer here, Pillsbury knows you and your family want to enjoy the outdoors as much as possible. So at your next BBQ, why not grill pizza using one of their tasty recipes ideas, including Pillsbury Barbecue Chicken Pizza or Pillsbury Grilled Pepper & Sausage Pizza? If you’ve never grilled pizza before, Pillsbury make its easy. They demonstrate the proper technique for grilling pizza. What if you don’t own an outdoor grill? No worries! You can also grill your pizza indoors using your stovetop and a cast-iron grill pan! I’ll show you how simple method this is by sharing my spicy-good Aye Carumba! Grilled Mexican Chicken Pizza.
This pizza has all our favorite Tex-Mex flavors: spicy sauce, gooey cheese, fajita-spiced chicken, veggies and a cilantro-lime crema drizzle! If you like your food spicy, you’ll definitely love this one! The key to making this pizza is to have all of your ingredients prepped and ready to go so you can keep an eye on the pizza as it grills to prevent over-browning!

A Weekend Gourmet Original
Ingredients:
· 2 green onions, thinly sliced
· 1 seeded, chopped Roma tomato
· 1 jalapeno, thinly sliced (optional)
· ½ small avocado, diced (optional)
· 6 ounces refrigerated fajita-flavored chicken breast, diced
· 4 ounce can tomato sauce mixed with ½ cup salsa
· 1 package Pillsbury Artisan Whole-Wheat Pizza Crust
· 2-3 tbs. olive oil
· 2 cups shredded Mexican four-cheese blend
· Fajita seasoning blend (I used Chef Paul Prudhomme’s Fajita Magic)
· Cilantro Lime Crema (make this ahead of time):
o 1 cup light sour cream
o 1 tsp. dried cilantro
o Juice of one lime
o Salt & pepper to taste
Directions:
Step 1: Preheat oven to 200 and place a rimmed cookie sheet inside. Heat a cast-iron grill pan over med-high heat for at least five minutes. Brush it liberally with olive oil. While the grill pan heats, remove the pizza dough from the container. Cut in half and place on parchment paper or foil. Liberally oil the top side. When the pan is hot, add the dough oiled side down and remove the parchment. Let the dough cook until it’s browned on one side, about 5 minutes. Flip the crust over and reduce heat to medium.
Step 2: Top the crust with half of the tomato sauce-salsa mixture. Carefully top with half of the cheese, diced chicken, onion and tomato. If desired, add the avocado and/or jalapeno. Cover with a large plate or lid and cook until the crust is well-browned and the cheese is melted. Keep an eye on the pizza to ensure it doesn’t overbrown…it can go from perfect to over-burnt very quickly. Total cooking time once you flip the crust is approximately 10 minutes, but your mileage may vary!

Step 3: Use a spatula to remove the pizza from the grill pan. Place on a cutting board and add fajita seasoning to taste. Place the pizza on the baking sheet in the pre-heated oven and repeat the cooking process with the second crust and the remainder of the toppings. Just before serving, drizzle the cilantro-lime crema on top of the pizza. Cut into squares and serve.

· 19-piece set of grill tools
· $10 gift card for pizza ingredients
