June Secret Recipe Club Featuring Cinnamon Banana Muffins
Hi, friends! Im back home in San Antonio (and the summer temps) after a weeklong vacation in Portland and the surrounding area. We saw so many wonderful sites, had a great visit with my brother-in-law and sister-in-law, and sampled some of the areas best food and wine!! Ill be sharing a two-part blog series about my trip this Wednesday and Friday. But first? Its time for one of my favorite monthly blog events: Secret Recipe Club!! My assigned blog this month is The Pink Apron. What a fun blog...so full of amazing recipes to choose from. Kelly is my kind of gal! She lives in Chicago, one of my most favorite cities to visit...and she loves artisan cheese. I think she would be a great foodie friend to grab a margarita at Frontera Grill the next time were in Chicago!!
With vacation looming on the horizon, I was looking for something quick and easy to make this month. I had two VERY ripe bananas in my kitchen, so her Cinnamon Banana Muffins immediately caught my eye!! Then, I came across some super-cute muffin liners with monkeys and bananas later that day. I took it as a sign...so I ran home and whipped up a batch of these yummy muffins to take to the office the next morning. They were simple to whip up, and my kitchen smelled wonderful while they baked. The only changes I made to the recipe were to add some Vietnamese cinnamon and some vanilla bean paste to the batter...and I used white chocolate chips and some chopped pecans instead of the suggested cinnamon chips. I looked in two stores and couldnt find the cinnamon chips, so I opted to use white chocolate instead. The nuts were a last-minute inspiration when I found them in my baking stash.

Cinnamon Banana Muffins

Step 1: Preheat oven to 350. Line a muffin tin with 12 paper liners and set aside. Add the following ingredients to a mixing bowl: 1 1/2 cups mashed very ripe bananas (the more ripe, the better!), 3/4 cup sugar, 1/4 cup canola oil, 1/4 cup skim milk, 1 tsp. vanilla bean paste (or vanilla), and 1 large egg. Whisk well to combine. Set aside.
Step 2: In a second bowl, combine the following ingredients: 1 1/2 cups cake flour, 1 1/2 tsp. baking soda, 1 tsp. Vietnamese cinnamon, and 1 tsp. salt. Make a well in the center of the dry ingredients and add the reserved wet ingredients. Stir just to combine, then gently fold in 1 cup white chocolate chips and 1/2 cup pecans.
Step 3: Add the batter to the muffin liners, filling each about 3/4 full. Bake for about 20 minutes, or until a toothpick inserted comes out clean. Let the muffins cool for 15 minutes before placing on a serving platter and digging in!
These muffins are really good...the texture is dense and moist, and the intense banana flavor really shines through!! The pockets of melted white chocolate and crunchy nuts were really nice accents. I took these to work, and my co-workers gave them a big thumbs up. I really loved the whimsical papers...the bananas and monkeys let everyone know exactly what they were about to eat. Im not monkeying around when I say I hope youll give these muffins a try very soon! While youre at it, make sure to check out all the great Group C SRC offerings that are being shared today!!

Savory Spinach Feta and Peppadew Muffins

Savory and delicious! Fresh spinach, feta cheese and my very favorite lesser-known ingredient...the peppadew. Wow, do I love those little guys. Theyre mildly sweet but also have just a tad bit of heat to them. Theyre great stuffed with blue cheese and eaten as an appetizer, and I always add them to my pasta sauces (see my Italian Chicken Cutlet recipe). Whatever the dish, you may be assured they will kick up the flavor. I usually buy them in the olive bar at my local market, but Ive also gotten them in the jarred olives section.
I found this amazing recipe in the September 2010 issue of Bon Appetit magazine. They adapted it from a game lodge located in Kruger National Park in South Africa called Singita Sweni Lodge. Im so glad they shared it because this will become a regular menu item in my home. In addition to being completely yummy, theyre easy to freeze and take with you for lunch, or on the go.

When making this dish, I recommend using fresh spinach (not frozen). I found this hearty, organic variety at Bristol Farms but the kind you get in the salad area of the market, pre-washed and in a bag will work fine, too. Also, I used a Pampered Chef 12-cup Stoneware Muffin Pan, which I totally love, but of course you can use any muffin pan youd like. Ive had really good luck with this stoneware pan as it cooks evenly and the sides of the muffins dont over-brown.

Makes 6-12 muffins depending on cup size (my pan yielded 8 generous muffins)
Oven 375 degrees F
Ingredients:
nonstick vegetable oil spray
2 3/4 cups all-purpose flour
1/4 cup sugar
2 teaspoons baking powder
1 teaspoon paprika
3/4 teaspoon salt
3/4 cup whole milk (I used 2%)
1/2 cup vegetable oil
2 large eggs
1 cup thinly-sliced fresh spinach leaves
3/4 cup crumbled feta cheese
1/2 cup chopped peppadews (the hot ones)

Spray muffin pan with nonstick spray.
In medium bowl place flour, sugar, baking powder, paprika, and salt, then whisk together.
In large bowl place milk, oil, and eggs, then whisk together.
Add flour mixture to milk mixture, then whisk together just until blended. Do not overmix. Batter will be very thick and gooey. Fold in spinach, feta cheese, and peppadews.
Fill each muffin cup to the top until there is no more batter. Bake in oven for 25-35 minutes, or until a toothpick inserted in the center comes out clean. I always start checking at the minimum recommended time. In this case, they were done in 27 minutes, but it will depend on your pan and the size of the muffin cups.
Top with butter (optional) and let cool for 5 minutes then remove from pan and place on cooling rack. If necessary, run your knife around the edges of the muffins to release them from the pan.

Most everyone has a great muffin recipe. This is one Ive been working on and I think its pretty darn good. The basic muffin is based on a Claire Robinson recipe. Theyre sweetened with honey and Ive added a brown sugar and nut crumble on top.
This time I used a 12 -cup muffin stoneware pan made by Pampered Chef that I borrowed from my friend Lisa Loughran. I may never go back to a regular metal muffin pan. The muffins cooked evenly and didnt over brown. Love it!
These muffins are dense and moist. They freeze beautifully - I just wrap them individually in plastic wrap, pull one out for breakfast, pop it in the microwave for about 45 seconds and theyre heavenly...maybe even better than when they first came out of the oven. What could be easier when youre in a hurry but still want a homemade breakfast? Okay, enough chatter - heres how I made them:
Makes 12 large muffins
Oven 375 degrees F
Topping:
1/2 cup packed light brown sugar
1/2 cup all purpose flour
1/2 teaspoon ground cinnamon
1/4 cup finely chopped walnuts (optional)
4 Tablespoons unsalted butter, softened, plus more for brushing
Mix all ingredients together to form a course crumb mixture, then set aside.
Muffins:
8 ripe bananas, medium sized
2/3 cup honey
1 cup chopped walnuts (optional)
2 sticks unsalted butter
2 large eggs
3 1/2 cups self-rising flour (be sure to use self-rising)
In large bowl, mash bananas, add honey and walnuts, mix then set aside.
Melt butter in medium-sized saucepan (one that seems too large for melting 2 sticks of butter) over medium heat. Youll begin to see the milk solids separate and a white foam will appear on top. Cook until the milk solids have turned golden brown, stirring occasionally. Keep an eye on this as you do not want it to burn.

Add about half the mashed banana mixture to the browned butter and continue cooking over medium heat for another minute or two. When you first add the banana mixture it will bubble up quite a bit but dont be alarmed, stir it and it will settle back down in a few seconds. This is why you need to use a larger saucepan than you might think, so it doesnt bubble over the sides.
Remove pan from heat and whisk this mixture into the bowl of the remaining banana mixture, then whisk in the eggs. Fold in the flour in 2 batches and be careful not to over mix. Use an ice cream scoop and place one full scoop in each muffin cup.

Add topping to each muffin, place in oven and bake for approximately 25-28 minutes. To check for doneness, insert toothpick in center of muffin - it should come out clean or with moist crumbs when done. Remove from oven and cool for about 5 minutes. Remove muffins from pan, brush tops with *melted butter and cool on rack.
*You could skip this step of adding melted butter, but it adds a glistening moistness to the muffin top once youve frozen and reheated it. In my opinion, its worth the extra calories.

Roasted Strawberry Basil Muffins

Oregons beloved Hood strawberries are in, and they are lovely. But, as much as Id love to get all puffy with regional pride, there are probably lovely strawberries coming in all over the country. Tinier than the supermarket behemoths, red and juicy throughout, begging to be eaten out of hand (or, if we must, with shortcake).
But even in the height of this ruby-red season, we get some not-so-great berries. Maybe theyve gotten so waterlogged as to become flavorless (last weeks rainstorms, Im looking at you), or theyre a bit dulled and shriveled after you, say, forgot that last pint in the back of the fridge (umm... no comment). But in times like these, weve always got roasted strawberries.
Roasting concentrates strawberries juices, turning even lackluster berries into flavor punches. And it also dries them out a bit, so they dont sog up your baked goods. I gave a recent watery batch of berries a good turn in the oven, then decided to fold them into some muffins (and yes, I do still have leftover sour cream — this is what happens when things are on sale). A little sprinkle of fresh basil gave them a bright herbal edge, keeping them from one-dimensional sweetness (I imagine many other herbs — mint, tarragon — could do a similar job). Its like springtime, but intensified a bit. And served up for breakfast.

1 1/2 pints strawberries
1 tablespoon sugar
1 1/2 cups flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon coarse salt
1/2 stick butter, melted and slightly cooled (if you fancy, brown the butter in a small saucepan, melting it until it takes on a toasty color, for an even more delicious depth of flavor)
1/2 cup sugar, plus additional for topping
1 egg
3/4 cup sour cream
1/4 cup milk
1/2 teaspoon vanilla extract
a few sprigs fresh basil leaves, cut into strips
Preheat your oven to 375° Fahrenheit. Wash the strawberries, and halve any large ones (or quarter them if theyre truly mammoth). Toss with the tablespoon of sugar, transfer to a rimmed baking sheet or casserole dish, and roast until the berries shrink and the juices come out and thicken, ~45 minutes (you can use a large sheet tray, or a smaller square baking dish, which will take a bit longer). Set aside and let cool slightly, but leave the oven on. Grease 10 muffin cups, and set aside.
Sift together the flour, baking soda, baking powder, and salt. Set aside.
In a separate bowl, mix together the melted butter, sugar, egg, sour cream, milk, and vanilla until well combined. Add the wet ingredients to the dries, give a turn or two, until just barely combined (better to under- than over-mix), then sprinkle in the strawberries and basil leaves, and give an additional turn or two until barely combined.
Quickly divide the mixture into muffin cups, coming just a bit below the lip of the cup. Sprinkle a dusting of sugar over the batter (you should need just a few spoonfuls for the whole tray). Bake until lightly golden and a tester comes out clean, ~15-20 minutes. Let cool slightly, then pop out of the muffin tin, and enjoy.

Basic Bran Muffins

Pity the poor bran muffin. Bakers often seem to assume it is the breakfast choice of the penitent, eaten solely as fiber delivery system. Even my beloved childhood bakery came up with a barely palatable fat-free version, composed of various whole grains shellacked together with a slurry of egg whites and honey. I was reminded of it the other day when I accidentally left the remains of a pot of hot cereal on the counter and it crusted over.
But these bran muffins, they are lovely. They take into account that you want toothsome whole grains (especially to counterbalance, say, the refried beans, cheese and guacamole that are also on your breakfast table), and have an almost nutty depth of flavor. But theyre also moist and light. The molasses and honey add sweetness and depth, and the nutmeg, orange rind and buttermilk add flavorful notes to lighten up all that brown. I sometimes grate in a few carrots or an apple, or stud them with nuts and seeds if Ive got em, but theyre nice enough on their own. Especially with a nice spread of butter -- like I said, its all about balance.

Bran Muffins
inspired by The New Laurels Kitchen, but tweaked beyond recognition over the years
yields 12 large muffins
2 cups whole wheat pastry flour
1 cup wheat bran
3/4 tsp salt
1 tsp baking soda
1/2 tsp nutmeg
1 1/3 cup buttermilk
1 Tbsp grated orange rind (optional)
2 eggs
1/4 cup canola oil
1/2 cup honey
1/4 cup molasses
Preheat your oven to 350 degrees, and grease or line 12 muffin cups.
Sift together the flour, bran, salt, soda and nutmeg in a large bowl. In a separate bowl, whisk together the buttermilk, orange rind (if using), eggs, oil, honey and molasses until well combined. Add the wet ingredients to the dries, and mix until just combined -- do not over-mix. Divide among the muffin cups (they will be fairly full), and bake until a tester comes out clean, ~20-30 minutes.

Red Currant Coconut Muffins with Orange Glaze
Red currants and shredded coconuts dont belong in a muffin?!...of course they do! Its so yummy! These muffins are perfect for breakfast or brunch, but who can resist them for afternoon, evening, and even midnight snacks? Theyre just too good.

- 1 cup of all-purpose flour
- 2 teaspoons of baking powder
- 1/4 teaspoon of salt
- 1/2 cup of sugar
- 8 tablespoons or 1 stick of butter, softened
- 2 eggs
- 1 tablespoon of orange rind
- 2 tablespoons of orange juice
- 2 tablespoons of sweetened coconut
- 1 cup of red currants (fresh or frozen)

- 1 large bowl
- 1 wooden spoon
- muffin pan
- muffin cups
- measuring cup
- measuring spoon
Muffin Instructions
- Preheat the oven to 375 degrees F (190 degrees C). Grease 12 muffin cups, or line with paper muffin liners.
- Combine the flour, baking powder and salt in a small bowl.
- In a large bowl, cream butter and sugar until light and fluffy.
- Beat in eggs into the creamed mixture until blended
- Add flour mixture. Mix some more.
- Add orange rind, coconut and orange juice. Mix some more.
- Fold in gently the red currants with a wooden spoon.
- Fill greased or paper-lined muffin cups two-thirds full.
- Bake at 375° for 20-25 minutes Place muffin cups on center rack of the preheated oven and bake until tops are golden and a toothpick inserted into the center of a muffin comes out clean.
- Allow to cool.
Orange Glaze Instructions
- 1 cup of confectionery sugar
- 2 to 3 tablespoon of orange juice
- In a small bowl, combine confectioners sugar and 2 to 3 tablespoons of orange juice. Mix until smooth, then refrigerate until thickened. Drizzle over cooled muffins.
- Sprinkle with coconut over the glaze. Add one red currant in the center of the muffin.
