July Foodie Recipe Collection Southern Inspired Picnic Dishes

This month, Im sharing a fabulous collection of Southern-inspired picnic recipes as part of the Mode Foodie Contributor Program. Summer is the perfect time to load up a picnic basket and dine al fresco -- preferably in the evening, as the Sun sets and theres a nice breeze! My Southern picnic basket is featuring recipes that include classic Southern foods. The recipes I selected are perfect for a picnic...or any Summertime potluck event.
Ive got everything from tea-brined fried chicken and sides like pasta salad and corn on the cob...to a sweet tea-lemonade beverage and watermelon-shaped crispy treats for dessert! My collection is fun, and many of the dishes can be prepared a day or so ahead and stored in the fridge until its time to load up your picnic basket. My Perfect Pie Collection Hand Pies Sweet and Savory
I have a confession to make: Ive never made homemade pie crust. I am hoping to cross it off my culinary bucket list in 2014, so this was a great way to get me thinking about making more pies this year! What is your favorite kind of pies? Maybe you prefer fruit pies, coconut cream, or no-bake pies in graham cracker crusts. Maybe you go for savory pies like quiche or chicken pot pie instead. I’ve been a fan of Breakfast for Dinner since childhood. To me, there’s something extra-special about enjoying breakfast foods like pancakes and eggs after dark…especially when the weather starts to turn cool! When I was growing up, my Mama would treat my siblings and I to a special breakfast for dinner meal when my Dad would go hunting in the Fall. To this day, when the first cool snap hits? One of the first things I want to do is whip up a tasty breakfast feast for dinner! Those childhood food memories tend to stick with us, yes? For this month’s Foodie Contributor Program Recipe Collection, I’m sharing some really great Breakfast for Dinner options…whether you’re craving something sweet or something savory.
I included recipes for handy biscuit sandwiches, savory and sweet pancake options, and lots of versatile egg-based dishes. Im even sharing a comforting savory Japanese pancake called okonomiyaki. My college roommate, Pieko, used to make this dish for us on weekends -- and I havent had it in years! The one thing all of the recipes Im sharing have one common theme: they’re comforting and filling. This month, I included one of my own favorite egg-based recipes – my spicy Puff Pastry Breakfast Chimichanga Rolls. I hope that you find a recipe or two in this collection that inspires you to get in the kitchen and cook up a fabulous Breakfast for Dinner for your loved ones!!

For this months Foodie Contributor Recipe Collection, Im focusing on a subject thats very near and dear to my heart: casseroles. Theres something very comforting about cooking -- and eating -- a hearty meal thats baked in the oven until bubbly. For me, casseroles bring back memories of my childhood. As an adult, casseroles tend to find their way to my dinner menu on a weekly basis. Casseroles are a busy cooks best friend, because theyre a filling and complete meal thats baked in one dish. That means less cleanup after dinner -- and leftovers make a delicious lunch the next day!
Casseroles can get a bad rap from those who consider them too retro or old school for modern cooks...but that definitely doesnt have to be the case! The recipes Im sharing this month have one thing in common: they all feature robust flavors that will temp your tastebuds and warm your stomachs on a chilly Winter evening. Ive got everything from Tex-Mex to pasta bakes...and even a couple of casseroles that can be assembled the night before and baked the next morning for a leisurely weekend brunch. I hope youll give these flavorful one-dish wonders a try in your own kitchen!
