Whole Foods Market Blossom Hill San Jose CA Opens Today





Whole Foods Market opens the doors at its newest store in San Jose today at 10:00am - Whole Foods Market Blossom Hill. The store is at 1146 Blossom Hill Road.  Thanks to my good friend Cristina, I was able to get a behind-the-scenes VIP tour of the store before it opened. Thank you C!!

Apart from the fact that the store is flat out gorgeous - its also energy efficient and environmentally friendly with much of its decor made from reclaimed wood, recycled glass, and recycled paper. A UTC Power fuel cell produces the electricity, heat and water through an electrochemical process and will generate 90 percent of the stores electricity needs.

Whole Foods has long been known as a health-conscious grocery store offering a wide selection of organic, sustainable, all natural and hormone free foods. I think youll find this store to be the perfect ratio of gourmet/specialty items to budget-friendly quality items - in other words, theres something for everyone.

February HEB Primo Picks Super Deluxe Cornbread Made with Central Market Honey Cornbread Mix


This months HEB Primo Pick featured item is Central Market All Natural Honey Cornbread Mix. Ive seen this mix on the shelf, so I was really excited to try it. Im from the south...I grew up eating cornbread at least once a week, and I love it! I especially love it when a quick mix produces results just as good as homemade...which this mix does. This is a southern-style cornbread mix, which means its sweet. My mama always added a heaping spoon of sugar to her cornbread growing up, and this mix is moist with sweetness from honey. All you have to add is milk, an egg, and some melted butter and youre ready to make a batch of some really tasty cornbread!


I decided to use this mix to create a flavorful cornbread to serve with red beans and rice with sausage for a quick dinner earlier this week. Because my cornbread has so many different layers of flavor, I decided to call it Super Deluxe Cornbread. When you look at the recipe see all the fun stuff I added to it, youll know see why "super deluxe" was the only name that did this cornbread justice.

Step 1: Preheat oven to 350. Line an 8x8 pan with foil or parchment, which will make it much easier to remove the cornbread from the pan and cut it. Set aside. Add the following ingredients to a large mixing bowl: 1 package Central Market Honey Cornbread Mix, 2-3 sliced green onions, 2 slices crumbled bacon, 3/4 cup kernel corn, 3/4 cup shredded co-jack cheese, and 2 tbs. dry ranch dressing mix.


Step 2: Add the following ingredients to a large measuring cup: 1 1/4 cups milk, one large egg, and 1/4 cup melted butter; whisk until combined. Make a well in the center of the dry ingredients. Add the wet ingredients and stir just until everything is combined. Spray the reserved pan with non-stick spray and evenly spread the cornbread mix in the pan. 


Step 3: Bake for 30-40 minutes, until the cornbread is golden-brown and a toothpick inserted in the middle comes out clean. Remove the cornbread from the pan using the foil or parchment as a sling. Cool completely, then cut into squares to serve with plenty of butter. 


This cornbread was so good! It was moist and sweet...and the fresh corn kernels brought a  nice freshness. The bacon brought a nice smokiness, and the green onions provided color and a light onion flavor. The ranch seasoning was present in each bite, but it didnt overwhelm any of the other flavors...it was a last-minute addition, but I really liked it! 

This recipe would also make really great corn muffins, and leftovers will freeze well if wrapped tightly and placed in a freezer bag. I served this cornbread for dinner, but it would also be great as part of a Sunday Brunch with hash browns, eggs, and sausage or bacon. My Texas readers can find this Central Market Honey Cornbread mix in the baking aisle at their local HEB or Central Market grocery stores.

Celebrating Muchos Mangos at Whole Foods Market Featuring Tropical Jerk Shrimp Mango Salad

Whole Foods Market is celebrating their annual Muchos Mangos event the entire  month of April, featuring amazing ataulfo (ah-tah-ul-foh) mangoes from Mexico. This variety of mango is sweet and juicy, with a thin pit and no fibrous strings. Theyre basically a little taste of spring, with a gorgeous vibrant-orange interior. This variety of mangoes is in season from March through June, so theyre perfectly suited for use in all sorts of warm-weather dishes! Because they arent fibrous, theyre easy to blend for using in smoothies and marinades. Theyre also great cubed in fruit salads and desserts. Heck, theyre great eaten by themselves out of hand! 

If you click the link above, youll find a very informative video that shows how to cut and prep the ataulfo mango. Its really easy once you do it a time a couple of times! Once you cup open the mango, youll find golden-orange fruit inside. Its so soft and luscious that you can eat it right out of the shell with a spoon if want. Thats how I enjoyed a few of the mangos that I purchased. The flavor is deeply sweet and spicy...like a tropical breeze on a remote island beach! I’m teaming up with Whole Foods to celebrate Muchos Mangos and create a healthy Springtime dinner that puts these sweet, juicy mangos front and center. My Tropical Jerk Shrimp-Mango Salad is a light, yet filling, main dish salad that will transport you to your favorite tropical beach at first bite. But, you dont need a passport or an exhausting plane trip!


This salad is full of bright flavors from cubes of mango and avocado, spicy Jerk-seasoned shrimp, candied cashews, bits of dried pineapple, and tangy feta cheese. This salad was ready to eat in less than 30 minutes…and it was bursting with guilt-free flavor. Let me show you how easy this salad is to whip up for dinner this week!

 Tropical Jerk Shrimp-Mango Salad

(1) Toss 4 cups of your favorite salad organic salad greens with your favorite dressing. I used a natural raspberry vinaigrette. Divide the greens evenly between two large plates. Toss 1/2 lb. shrimp in 1 tbs. jerk seasoning and quickly sear in a bit of olive oil in a non-stick skillet.

(2) To assemble the salads, top each salad with the following ingredients: 1/4 cup dried pineapple bits, 1/3 cup chopped candied cashews, 1/3 cup feta cheese, 1/2 a small diced avocado, 1/2 cup dice ataulfo mango, and half of the shrimp. 


This colorful salad is a tropical vacation on a plate! The fiery shrimp is tempered by the creamy avocado and sweet mango, the nuts and pineapple provide a bit of texture, and the feta brings a tart saltiness to round out the flavor profile. Add it all up, and you’ve got a winner of a salad on your hands. It’s as pretty to look at as it’s refreshing to eat! 

You can feel free to serve this salad with warmed flour tortillas on the side for making some delicious wraps, but we enjoyed ours with crusty oven-warmed whole-wheat bread from the Whole Foods bakery. For dessert, I made light and simple mango parfaits by layering cubes of ataulfo mango with mango-flavored Greek yogurt and a bit of low-fat granola from the Whole Foods bulk aisle. Our dessert was ready to eat in just a few minutes, and it was so gorgeous...not to mention low in fat and high in calcium and vitamins! Muchos Mangos is going on at your local Whole Foods Market until the end of April, so make sure to stop by and pick up some of these delicious mangoes and give them a try!
